Ramen isn't just soup; it's a craft. But sometimes, it's a test of endurance. I visited the legendary spicy ramen shops of Tokyo to see if I could survive.
The Broth
A rich Tonkotsu base, boiled for 18 hours until cloudy and thick. The heat comes from a special blend of chili oil (Rayu), habanero powder, and sansho pepper (which numbs your tongue).
The Experience
The first bite is misleading. It's delicious. Then the heat builds. By the third slurp, you're sweating. By the end of the bowl, you've reached a meditative state of endorphin rush.
